  1. 1
Take your flank steak (1.5 lb) and slice it against the grain, at an angle, into thin strips. This helps the marinade absorb better and allows the steak to cook more evenly. If the steak is difficult to cut, place it in the freezer for 10-15 minutes first to firm it up.

To make the marinade, add garlic , white onion , and serrano pepper to a small blender and pulse until minced. Add cilantro , lime juice , orange juice , reduced sodium soy sauce , red wine vinegar , sea salt , chili powder , black pepper , and red pepper flakes , then blend for ⏱️ 10-20 seconds until combined.
garlic: 5 cloves, white onion: 40 g, serrano pepper: 1, cilantro: 1 handful, lime juice: 1 small, orange juice: 1/2, reduced sodium soy sauce: 50 g, red wine vinegar: 25 g, sea salt, chili powder, black pepper, red pepper flakes
  3. 3
Add the steak and marinade to a zip-lock bag or bowl, making sure the steak is evenly coated. Refrigerate for at least 1 hour, though overnight is recommended for the best flavor.
  4. 4
Slice your russet potatoes into crinkle cut fries and soak them in ice water for ⏱️ 30 minutes . Once soaked, pat them completely dry, spray with non stick cooking spray , and season generously with sea salt and garlic powder . Air fry at 400°F for ⏱️ 18-20 minutes , shaking the basket every 5 minutes for even cooking.

Preheat a pan over medium-high heat (about 7/10 heat). Add the steak in batches, making sure not to overcrowd the pan. Cook for about 2 minutes per side for a medium doneness, then let the steak rest for ⏱️ 10 minutes before slicing.
  6. 6
To assemble the skillet, add the fries and 2% colby jack cheese , then air fry for another minute until the cheese is melted. Top with the steak, homemade pico , guacamole , plain non fat greek yogurt , and sliced serrano peppers. Enjoy!
